Combine potatoes, onion, egg, parsley and sifted flour in a mixing bowl. Stir with
a wooden spoon, until ingredients are just combined.
Heat oil in a heavy-based frying pan. Spoon tablespoons of potato mixture into the
pan. Cook over medium high heat until golden brown and cooked through.
